Intro
Brewery and brasserie situated in the heart of Lausanne, wellknown not only for its beer but also for its atmoshpere
Beer production is done locally:
- The malt is milled, mashing (mixing of grist and brewing water)
- Fermentation process (sugars won from the malt are metabolized into alcohol)
- Conditioning (additional fermentation, maturation and clarification)
